Curry Creamed Corn

Ingredients
  

  • 1.25 quarts frozen corn kernels
  • 1 pound cream cheese
  • 1 cup white sugar
  • 3 tablespoons granulated garlic
  • 2 tablespoons granulated onion
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons chicken bouillon
  • 4 teaspoons black pepper
  • 1 teaspoon Madras yellow curry powder
  • 2 tablespoons cilantro chopped

Method
 

  1. Bring a medium pot of water to a boil. Add frozen corn and boil for 5 minutes.
  2. Pour corn into a strainer and let drain to dry for 15 minutes. Set aside.
  3. In a medium empty pot, bring to low to medium heat.
  4. Add in cream cheese and heat until softened.
  5. Add boiled dry corn in with cream cheese and stir well. Making sure all corn kernels are covered with melted cream cheese.
  6. Add in sugar, granulated garlic, granulated onion, cajun seasoning, chicken bouillon, and black pepper. Stir well to ensure everything is evenly coated.
  7. To serve, plate in small side bowls and pinch with a touch of curry powder on top. Garnish with a sprig of chopped cilantro!
